Fried Cabbage and Apples with Potatoes
|4 potatoes, peeled and diced|
|3 Jonagold apples, peeled, cored, and chopped|
|1 large head cabbage, chopped|
|1/2 cup butter|
|2 Tbsp brown sugar|
|1 tsp Aunt Mary's Italian White Wine Vinegar|
|1/3 cup apple cider|
|1/2 Tbsp caraway seeds|
|Salt and freshly ground black pepper to taste|
Cook potatoes in salted water until tender (when finished, drain, and keep warm). Meanwhile, combine chopped apples and cabbage in a large bowl.
In a large skillet, melt butter and combine with sugar and vinegar. Stir in apples and cabbage; cover and cook over low heat 8 minutes. Stir in apple cider and caraway seeds and continue cooking until tender. Season with salt and pepper to taste. Pour cabbage mixture over potatoes and combine.
