How To Prepare Fresh Chestnuts

Use a sharp knife to peel a thin strip of skin off the side of the chestnuts. Place chestnuts in a saucepan and cover with cold water. Cover and simmer until tender when pierced with the point of a knife — 25 to 30 minutes. Drain. Cover with cold water and let it stand for 15 minutes. Use a sharp knife to peel off the remaining outer and inner brown skin. Keep refrigerated. (Chestnuts may be prepared in this manner up to one week before using them in a recipe.)
