Asparagus or Green Beans with Gremolata
|2½ lbs asparagus or green beans|
|1/2 cup flat leaf parsley|
|2 lemons, zested|
|4 to 6 cloves garlic|
|3 Tbsp Vera Jane's Extra-Virgin Olive Oil|
Steam asparagus or green beans for 4 to 5 minutes, or until tender. Prepare gremolata by placing parsley, lemon zest, garlic, and salt into a food processor and process for 10 to 20 seconds until finely chopped. Place vegetables on a serving platter and sprinkle with olive oil and gremolata. Serve hot or at room temperature.
