Asian Pineapple Cucumber Salad
|1 fresh pineapple, cut into chunks|
|1 cucumber, peeled, quartered, seeded, and cut into 1/2-inch pieces|
|1 red bell pepper, seeded and cut into 1/2-inch pieces|
|1/2 red onion, sliced|
|1 Tbsp fresh basil, chopped|
|2 Tbsp fresh lime juice|
|2 Tbsp soy sauce|
|2 tsp sugar|
|1/4 tsp hot chili sesame oil*|
In a small bowl, combine dressing ingredients. In a large bowl, combine pineapple, cucumber, red bell pepper, red onion, and basil with dressing.
*Or 1/4 tsp sesame oil, for a less spicy version.
