Cauliflower and Salsa
|1 head cauliflower, cut into florets|
|1 to 2 Tbsp Vera Jane's Extra-Virgin Olive Oil|
|1/4 tsp ground coriander|
|1/4 tsp paprika|
|1 cup DLM Salsa|
|Salt to taste (optional)|
|1 Tbsp cilantro, chopped (optional)|
Steam cauliflower florets over boiling water for 5 minutes or until just tender. Drizzle cauliflower with olive oil.
Combine coriander and paprika with salsa and pour over cauliflower. Gently combine mixture (add salt if desired). Serve hot or cold. Top with cilantro prior to serving.
