Cauliflower and Cheddar Cheese Sauce

1 head cauliflower, rinsed and broken into florets
3 Tbsp butter
3 Tbsp flour
1/4 tsp salt
1/8 tsp pepper
1/2 tsp ground nutmeg
1½ cups milk
1 cup Wisconsin Cheddar cheese, grated

Steam cauliflower florets for 16 minutes or until tender. Melt butter in a sauce pan, remove from heat, and stir in flour and seasonings. Gradually add milk, stirring until well mixed. Cook over low heat, stirring constantly until thickened and smooth (add more milk if a thinner sauce is desired). Cook for 5 minutes longer; add cheese. Stir until smooth and well blended. Serve over warm cauliflower florets.
