Classic French Vinaigrette
|1 clove garlic, finely minced|
|1 tsp Dijon mustard|
|3 Tbsp Marianne's Vinegar|
|9 Tbsp Vera Jane's Extra-Virgin Olive Oil|
|Freshly ground pepper|
Mash garlic in a small bowl. Add mustard and vinegar; whisk to blend. Add olive oil slowly, whisking to emulsify. Add salt and pepper to taste.
Toss room temperature vinaigrette with salad greens just before serving, and use sparingly. Store unused vinaigrette tightly covered in the refrigerator. Makes 3/4 cup
