|1 Tbsp Vera Jane's Extra-Virgin Olive Oil|
|1/2 yellow onion, sliced|
|1 zucchini, sliced|
|1 yellow squash, sliced|
|1 cob fresh corn, kernels removed|
|1 Tbsp fresh lime juice|
|2 tsp taco seasoning|
|2 Tbsp fresh cilantro, chopped|
Sauté onion in oil 1 to 2 minutes. Add zucchini, yellow squash, and corn; sauté an additional 2 to 4 minutes until tender. Add lime juice and taco seasoning, combining well. Serve sprinkled with chopped cilantro.
For a unique spicy version, replace taco seasoning with 1/8 to 1/4 tsp chipotle chili powder, pinch of cumin, pinch of cinnamon, and salt to taste.
