Skewered Sweet Onions
|5 large sweet onions peeled and quartered lengthwise, leaving the root attached to each quarter|
|Vera Jane's Extra-Virgin Olive Oil|
|1/4 cup Aunt Vera's Italian Red Wine Vinegar|
|Juice of one lime|
|Pinch of sugar|
|1/2 cup Vera Jane's Extra-Virgin Olive Oil|
|2 Tbsp soy sauce|
|Freshly ground pepper, to taste|
|1 Tbsp freshly chopped thyme|
Skewer the onion quarters on metal skewers. Brush lightly with olive oil and grill over coals, turning until golden brown and tender. Remove from skewers, and pile into a bowl.
Combine marinade ingredients, and pour over hot onions. Marinate at least one hour. Serve at room temperature.
