Hatch Chile Salsa

1 qt Roasted Hatch Chiles, seeded and diced
6 Tbsp Vera Jane's Extra-Virgin Olive Oil
2 Tbsp salt
1 Tbsp black pepper
2 cups diced tomatoes
1 cup cilantro
3 Tbsp lime juice

Combine all ingredients and enjoy!
