Bourbon Peach Shortcakes
|2 Tbsp Bourbon|
|2 Tbsp brown sugar|
|1 lb peaches, sliced|
|1 cup heavy cream, whipped|
|3 Tbsp mascarpone cheese|
|1-2 Tbsp powdered sugar to taste|
|4 DLM Vera Jane's Shortcakes, split in half|
In a medium saucepan, heat Bourbon and sugar. Cook briefly until sugar dissolves, then add peaches. Cook until peaches are warmed through and release their juices, about 2 minutes. Remove from heat. Whip the cream and mascarpone together until soft peaks form. Adding sugar to taste, if needed.
Place shortcake bottom on a serving plate and generously spoon on peaches. Dollop with the whipped cream and place shortcake top over cream. Serve immediately.
