Shaved Asparagus Salad

1 bunch asparagus
1 handful pistachios, roasted, shelled, and chopped
1 Tbsp mint, chopped
3 Tbsp lemon juice, freshly squeezed
2 Tbsp Sherry vinegar
1 tsp DLM 100% Pure Honey
3 Tbsp Vera Jane's Extra-Virgin Olive Oil
Salt and pepper to taste
Parmigiano-Reggiano or Pecorino Shavings

Using a vegetable peeler, shave the asparagus lengthwise to create strips. Toss the pistachios and mint. Whisk together lemon juice, Sherry vinegar, honey, and olive oil. Pour over aspragus and mix with salt and pepper to taste. Shave Parmigiano-Reggiano or Pecorino on top and serve.

Makes 2 Salads servings
