|(1) 3.5-4 lb Whole Hill Family Farm Chicken|
|Sea salt and freshly cracked black pepper|
Preheat oven to 450ºF. Place chicken in a baking dish and generously season with salt and pepper. Bake uncovered in the oven for 45 minutes. After 45 minutes, turn the oven off, but do not open the door. Leave the chicken in the undisturbed oven for an additional 15 minutes, allowing it to rest. Carve and serve.
