Herb-Roasted Rack of Pork

Rack of DLM Natural Pork, Frenched
2 Tbsp fresh sage, chopped
2 Tbsp fresh thyme, chopped
2 Tbsp fresh rosemary, chopped
Salt and pepper to taste

Preheat oven to 375°F. Season roast on all sides with salt, pepper, sage, thyme, and rosemary. Place roast, fat side up, in shallow roasting pan. Roast for 1.5 to 2 hours (20 minutes per pound), or until internal temperature reaches 145°F. Serve with roasted red potatoes and sauerkraut for a delicious New Year’s meal!

Frenched Roast: "Frenching" a roasting simply means trimming the rib bones of all extra meat. You can do this yourself, or ask one of our butchers to do it for you.
