Hatch Pepper Cheddar Rice

1 Tbsp Vera Jane's Extra-Virgin Olive Oil
2 cloves garlic, minced
1 cup bell pepper (your choice of color), chopped
5 green onions, chopped
1/4 cup Roasted Hatch Green Chiles, chopped
2 Tbsp dry white wine
2 cups rice, cooked
2/3 cup half and half
2 cups Hatch Pepper Cheddar, shredded
Salt and pepper to taste

In a sauté pan over medium high heat, add olive oil and sauté garlic and bell peppers until peppers are slightly tender. Add green onions, Roasted Hatch Chiles, and white wine. Sauté until majority of wine has dissipated. Reduce heat to medium low and add cooked rice, half & half, salt, pepper, and shredded Hatch Pepper Cheddar. Stir until cheese has melted. Serve hot.
