Starfruit Salad with Mint - Gluten Free
|1/4 cup Harmless Harvest 100% Raw Coconut Water|
|1 tsp rice wine vinegar|
|1 Tbsp HouseMade Sriracha Thai Chili Hot Honey|
|2 tsp crystallized ginger, finely minced|
|1 Tbsp lime juice, freshly squeezed|
|1/2 cup mint leaves, finely chopped|
|1 English cucumber|
In a medium bowl, whisk together the coconut water, vinegar, sriracha honey, ginger, lime juice, and chopped mint. Set aside to allow the flavors to marry.
Score the clean cucumber with a zester for a decorative edge; slice on an angle. Slice starfruit into thin slices, maintaining the star shape. Peel the mangoes and slice them thicker than the starfruit. Add the chopped ingredients to the dressing and toss to coat.
*Ripe starfruits are a light orange color.
