Hatch Chili, Watermelon, and Peach Salsa
|2 cups watermelon, diced|
|1 cup Tree-Ripened Peaches, diced|
|4 Hatch chiles, fresh or roasted, diced|
|1 small red onion, diced|
|1 tsp orange zest|
|2 Tbsp lime juice|
|1 bunch cilantro, chopped|
|Salt to taste|
In a large bowl, gently mix together watermelon, peaches, chiles, onion, and zest. Pour in lime juice and stir. Add cilantro, taste, and add salt as needed. Cover and chill for at least 2 hours or overnight.
Serve over grilled fish, pork, or chicken.
