Hatch Chile, Watermelon, and Peach Salsa - Gluten Free

2 cups watermelon, diced
1 cup peaches, diced
4 Hatch chilies, fresh or roasted, diced
1 small red onion, diced
1 bunch cilantro, chopped
2 Tbsp lime juice
1 tsp orange zest
salt to taste

In a large bowl, gently mix together watermelon, peaches, chilies, onion, and zest. Pour in lime juice and stir. Add cilantro, taste and add salt as needed. Cover and chill for at least 2 hours or over night.
