Watermelon, Blueberry & Feta Salad - Gluten Free
|4 oz goat feta cheese, crumbled|
|salt to taste|
|1 (5 pound) watermelon|
|1/3 cup Vera Jane's Extra-Virgin Olive Oil|
|3 Tbsp lemon juice|
|2 Tbsp torn fresh mint leaves, plus whole leaves for garnish|
|2 cups blueberries|
Cut the flesh from the melon and cut into 1 inch cubes.
In a small bowl, whisk the lemon juice and olive oil. Add the chopped mint and salt to taste.
In a large bowl, combine the melon, blueberries, mint, and feta. Pour the dressing over the melon mixture and toss gently until everything is coated and evenly mixed.
To serve, divide salad among individual cups and garnish with shole mint leaves.
