Fiesta Vegetables - Gluten Free

1 Tbsp Vera Jane's Extra-Virgin Olive Oil
1/2 yellow onion, sliced
1 zucchini squash, sliced
1 yellow squash, sliced
1 cob fresh corn, kernels removed
1 Tbsp fresh lime juice
2 tsp taco seasoning
2 Tbsp fresh cilantro, chopped

Sauté onion in oil 1-2 minutes. Add zucchini, yellow squash, and corn; sauté an additional 2-4 minutes until tender. Add lime juice and taco seasoning, combining well. Serve sprinkled with chopped cilantro.



For a unique spicy version, replace taco seasoning with 1/8 to 1/4 tsp chipotle chili powder, pinch of cumin, pinch of cinnamon, and salt to taste.
