Bacon-Peanut Truffles–Gluten Free

|2 Tbsp dark brown sugar|
|1/4 tsp salt|
|3/4 cup DLM Honey Roasted Extra-Large Peanuts|
|6 slices DLM Uncured Bacon, cooked plus 2 slices for garnish (optional)|
|1/3 cup DLM Organic Creamy Peanut Butter|
|6 oz bittersweet chocolate|
Process first 3 ingredients and 6 slices of bacon in a food processor 20 to 30 seconds until finely ground. Stir together bacon mixture and peanut butter in a small bowl until smooth. Cover and chill 2 hours.
Shape rounded teaspoonfuls of bacon mixture into 3/4-inch balls. Place on a parchment paper-lined baking sheet, chill 1 hour.
Microwave chocolate in a microwave-safe bowl on high for 1 to 1½ minutes until melted and smooth, stirring in 30-second intervals. Dip chilled bacon balls into chocolate and place on a parchment-lined baking sheet. Immediately sprinkle tops with bacon pieces if so desired. Chill 30 minutes before serving.
