Salad Greens with Dried Cranberries, Clementines, & Goat Cheese

5 clementines
1 Tbsp Champagne vinegar
1 Tbsp DLM 100% Pure Honey
1 tsp Vera Jane’s Extra-Virgin Olive Oil
5 cups salad greens (baby spinach, romaine, and endive)
1/2 cup dried cranberries
1/4 cup (1 oz) goat cheese, crumbled

Segment 2 clementines and set aside. Juice the remaining. (You should have about 1/3 cup juice). Whisk together juice, vinegar, and honey in a serving bowl. Pour oil in slowly, whisking until well combined. Add salad greens to bowl and toss gently to combine. Divide salad among 4 plates, and sprinkle evenly with dried cranberries and goat cheese. Top with reserved clementine segments. Serve.
