Kiku Apple & Cheese Salad Gluten Free

1 cup Edam cheese, diced
1 cup peeled Kiku apples, diced
1/8 cup celery, sliced thin
1 Tbsp Sherry
1 Tbsp Aunt Mary's Italian White Wine Vinegar
Sea salt and pepper
1/2 Tbsp lemon juice
1/4 cup Vera Jane's Extra-Virgin Olive Oil

Put cheese, apples, and celery in a medium bowl. Mix Sherry, vinegar, and lemon juice together in a small bowl. Slowly whisk in the olive oil. Season with salt and pepper to taste. Mix with apples, cheese, and celery. Serve immediately.
