Skillet Corn Bread
|2 cups yellow cornmeal|
|1 cup all-purpose flour|
|4 tsp baking powder|
|3/4 tsp salt|
|1 cup sugar|
|1 large egg, beaten|
|1½ cups milk|
|2 to 3 Tbsp bacon grease or shortening|
Preheat oven to 425°F. Combine cornmeal, flour, baking powder, salt, and sugar in a large mixing bowl. Add egg and milk and gently mix well. Do not beat. Set aside.
Heat bacon grease or shortening in a 9-inch cast iron skillet, over medium high heat until it is almost smoking, 3 to 4 minutes. Pour in the batter and cook for 2 to 3 minutes or until edges begin to turn golden.
Place skillet in the oven and bake for 25 minutes or until golden brown. Cool for 10 minutes and slice to serve.
