Chicken Sausage Mediterranean Skillet

1/3 cup fresh scallions, chopped
1 Tbsp Vera Jane's Extra-Virgin Olive Oil
3 dried apricots, finely chopped
4 DLM Storemade Mild Chicken Sausages, sliced into 1/2-inch pieces
2 cups basmati white rice, cooked
1/2 cup low sodium chicken broth
1/4 tsp DLM Ground Sage
1 Tbsp fresh parsley, chopped
1 cup plain nonfat Greek yogurt
1/3 cup fresh basil, chopped
2/3 cup fresh seedless red grapes, quartered
1/4 cup almonds, slivered and roasted (optional)

In a medium skillet, sauté scallions in olive oil for 3 to 5 minutes. Add sausage slices and apricots, sauté for 5 minutes. Add rice and broth, simmer 1 minute. Add sage and parsley, cook for another 1 to 2 minutes.



Mix in yogurt and basil, heat thoroughly 1 to 2 minutes. Season with salt and pepper. Fold in grapes. Place in large bowl or serving dish and top with almonds if desired. This can be served warm or cold.
