Crunchy Veggie Burrito Banditos

¼ cup ranch salad dressing
½ tsp chili powder
½ cup shredded carrots
½ cup chopped broccoli
½ cup cauliflower
2 green onions, thinly sliced
4 oz Cheddar cheese, shredded
(4) 7-inch flour tortillas
1 cup iceberg lettuce, torn into bite-size pieces

In a mixing bowl, combine salad dressing and chili powder. Add the carrots, broccoli, cauliflower, green onions, and cheese. Lay tortillas flat, then spoon about 1/2 cup vegetable mixture and 1/4 cup lettuce down the center of each tortilla. Wrap each tortilla around the vegetable mixture by folding one end over, then each of the two sides. One end will remain open.

Makes 4 servings
