Shepherd’s Salad is light, refreshing, and easy to make.
|3 Tbsp Vera Jane’s Extra-Virgin Olive Oil|
|1 1/2 Tbsp lemon juice|
|3/4 tsp sea salt|
|Freshly ground black pepper, to taste|
|2 tomatoes, chopped|
|1 cucumber, chopped|
|1 Cubanelle or banana pepper, chopped|
|1/4 cup red onion, finely chopped|
|1/2 cup flat-leaf parsley, chopped|
To make dressing, combine olive oil, lemon juice, sea salt, and pepper in a bowl. For salad, combine tomatoes, cucumber, pepper, red onion, and parsley. Toss with dressing. Let stand 10 minutes before serving.
