Ancient Grain and Apple Salad with Cumin Gluten Free

2 tsp butter
1 cup Arrowhead Mills Organic Whole Millet
2 cups water, boiling
2 apples, unpeeled, cored, and shredded
DLM Fresh-Squeezed Orange Juice (just enough to coat shredded apples)
3/4 tsp DLM Ground Cumin
1/2 tsp kosher salt
1/2 tsp DLM Ground Black Pepper
1/8 tsp DLM Ground Cinnamon
1/8 tsp DLM Ground Cloves
1 cup parsley, chopped
1 bunch spring onions, finely chopped, include some greens
1 cup dried cherries
Roasted walnut halves, roughly chopped

Melt butter in heavy skillet; toast millet at medium-high heat until the grain is deep golden in color. You will hear faint popping and smell a nutty aroma. Add boiling water and bring to a simmer over medium-high heat. Cover and simmer until the water is absorbed and the millet is tender, 15 to 20 minutes. Remove from heat and set aside. Cool. Shred apples into bowl containing orange juice (this will prevent apples from turning brown). Measure spices into another bowl. When millet is cool, fluff with a fork, place in a large prep bowl, add spices, and mix. Then add parsley, shredded apple mix, onions, and cherries. Serve with walnuts if desired.
