Honey-Grilled Shrimp and White Bean Salad

4 tsp sherry vinegar
4 tsp Vera Jane's Extra-Virgin Olive Oil
1 Tbsp fresh thyme, chopped
2 tsp fresh garlic, minced
1 tsp fresh rosemary, chopped
1/2 tsp black pepper
4 cups spring mix, loosely packed
1 cup grape tomatoes, halved
1/4 cup fresh flat-leaf parsley, chopped
(1) 15.5-oz can Great Northern Beans, rinsed and drained
1 Tbsp DLM 100% Pure Honey
1 tsp water
24 medium shrimp, peeled and deveined (1 lb)
Cooking spray
1/4 tsp salt

Combine first 6 ingredients in a large bowl; stir with a whisk. Add spring mix, tomatoes, parsley, and beans to bowl, and toss gently to coat. Combine honey and 1 tsp water in a medium bowl, stirring with a whisk. Add shrimp to honey mixture and toss to coat. Heat a grill pan over medium-high heat; coat pan with cooking spray. Sprinkle shrimp with salt. Add shrimp to pan and cook 2 minutes on each side, or until done. Serve with salad.
