Rum Sabayon Sauce with Fresh Berries

2 eggs
3 egg yolks
2–4 Tbsp rum
2 Tbsp fresh lemon juice
1 lb of fresh berries of your choice, washed and stemmed

Whisk together first five ingredients in a double boiler

over medium heat. Heat the sauce, whisking continuously,

for about 5 minutes or until it just thickens. (Do not let it boil, or it will curdle!) Remove from the heat. Serve warm or chilled over fresh berries.
