Cod with Tomato and Artichoke Sauce

(1) 10-oz jar DLM Marinated Artichoke Quarters, drained and 2 Tbsp oil reserved
1 small onion, chopped
3 large garlic cloves, minced
1½ tsp DLM Dried Oregano
(1) 28-oz can undrained DLM San Marzano Whole Peeled Tomatoes D.O.P., coarsely chopped
Salt and pepper
1½ lbs cod fillets

Heat oil from artichokes in a large, heavy skillet over medium heat. Add onion and garlic; sauté for 3 minutes. Stir in the artichokes, oregano, and tomatoes with their juice; bring to a boil. Season the fish with salt and pepper. Place fish atop vegetables in the skillet. Cover the skillet and reduce heat to medium-low. Simmer until fish is just opaque in the center, about 5 minutes. Transfer fish to platter; keep warm. Increase the heat and boil mixture in the skillet until liquid thickens to sauce consistency, about 5 minutes. Season sauce with salt and pepper. Serve fish with sauce over the top.
