Lemon-Mustard Flounder Gluten Free

2 Tbsp unsalted butter, softened
2 tsp DLM Classic Dijon Mustard
1 Tbsp Italian parsley, chopped
1 tsp fine lemon zest
Vera Jane’s Extra-Virgin Olive Oil
4 flounder fillets (about 1½ pounds)
Sea salt and freshly cracked pepper

Place butter in a small bowl and combine with mustard, parsley, and lemon zest. Set aside. Arrange oven rack about 4 inches from heat. Preheat broiler. Line baking sheet with aluminum foil. Oil foil lightly with olive oil. Place flounder fillets on baking sheet and spread with butter mixture. Season to taste with salt and pepper. Broil for 4 to 5 minutes or until fish is just cooked through.
