½ Tbsp Vera Jane’s Extra-Virgin Olive Oil
½ Tbsp butter
2 large sweet onions, halved and thinly sliced
Dash DLM Sea Salt
Dash DLM Tellicherry Pepper
¼ cup all-purpose flour
½ tsp DLM Sea Salt
½ tsp DLM Tellicherry Pepper
½ tsp DLM Garlic Powder
1 Tbsp Vera Jane’s Extra-Virgin Olive Oil
4 duBreton Loin Pork Chops, ¾-inch thick (or use your favorite cut)
1 cup DLM Apple Cider
¼ cup DLM Apple Butter (either type)
1 Tbsp water
1 tsp garlic, minced
1½ Tbsp Creole mustard
½ recipe for caramelized onions
Heat oil and butter in a large skillet over medium-high heat. When butter is melted, add onions. Toss with a spatula until onions are coated in oil/butter mixture. Reduce heat to medium/medium low and stir frequently for about 10 minutes. Sprinkle with sea salt and pepper and continue to cook, stirring every few minutes, for another 15–30 minutes or until onions are a rich amber color.
Preheat oven to 375°F. Combine the flour, salt, pepper, and garlic powder together in a small bowl. In a large oven-safe skillet, heat 1 Tbsp olive oil over medium-high heat. Dredge the pork chops in the flour mixture and brown them for 2–3 minutes on each side or until brown and crispy.
While the pork chops are browning, combine the apple cider, apple butter, water, garlic, and mustard. When the pork chops are done browning, add the cider mixture to the pan and cook for 1–2 minutes or until the sauce begins to evaporate and thicken. Remove from heat and spread the caramelized onions evenly over the pork chops. Cover the pan with a lid and place in oven for 30 minutes.
