Try these quick, meatless Lasagna Roll-Ups for a filling lunch or dinner.
|8 to 10 lasagna noodles|
|Goat cheese, softened|
|2 small zucchini, thinly sliced lengthwise (use a mandoline), blanched|
|2 carrots, shredded and blanched|
|2 roasted red peppers, seeded and cut into strips|

Cook lasagna noodles according to package directions. Cool. Cut the lasagna noodle in half lengthwise, giving you two short pieces. Spread the goat cheese on top of the noodle. Layer a slice of zucchini, shredded carrots, and red pepper. Roll and enjoy. Use the DLM Original Marinara as a dipping sauce.
