Fruit Pizza Gluten Free
|Gluten free cookie mix|
|Cream cheese layer:|
|(2) 3-oz pkgs Philadelphia cream cheese, softened|
|1/4 cup sugar|
|1/2 tsp Nielsen-Massey Vanilla|
|Assorted fresh fruit to cover, such as sliced peaches, strawberries, kiwi, blueberries, etc.|
|1/2 cup gluten free currant jelly|
|1 Tbsp water|
Prepare you favorite gluten free cookie mix according to directions. Press into a 12-inch round shallow sheet pan. Bake for 10 to 14 minute or until a toothpick inserted about 1 inch from the edge comes out clean. Cool on baking sheet for 15 minutes, cool completely.
Cream Cheese Layer:
Combine ingredients and beat until smooth. Place cooled crust on a serving platter and spread with cream cheese mixture. Top with fruit.
Combine jelly and water in a small saucepan and heat over low heat until jelly melts. Spoon evenly over fruit.
Refrigerate before serving. Best served within 3 hours of preparation.
