Lemon Tri-Color Pagoda Pasta with Artichokes Gluten Free
|(1) 8-oz pkg Ancient Harvest Gluten Free Organic Pagoda Pasta, cooked*, drained, and cooled|
|3 Tbsp Vera Jane's Extra-Virgin Olive Oil|
|1 Tbsp lemon juice|
|1/2 tsp fresh ground pepper|
|1 clove garlic, minced|
|4 green onions, sliced|
|(1) 10-oz jar DLM Marinated Artichoke Quarters, drained|
|10 cherry tomatoes, halved|
Cook pasta according to directions and set aside. Mix olive oil, lemon juice, pepper, and garlic in a large bowl. Add pasta, onions, and artichokes; toss to coat. Just before serving, add tomatoes and sprinkle with Parmigiano-Reggiano.
*Gluten free pasta easily overcooks, check for al dente before recommended time.
