Orange and Red Onion Salad

4 cups Boston lettuce
1 cup orange sections
1/4 cup red onions, thinly sliced
1/2 cup fresh orange juice
2 Tbsp white wine vinegar
1 Tbsp Vera Jane's Extra-Virgin Olive Oil
1/4 tsp fresh ground pepper
1/8 tsp salt

Combine lettuce, orange sections, and red onions in a large bowl. Combine orange juice, white wine vinegar, olive oil, pepper, and salt in a small bowl and stir well with a whisk. Drizzle lettuce mixture with the orange juice mixture; toss gently to coat.
