Wild Greens with Warm Pancetta Dressing

|1/4 lb pancetta, thinly sliced and chopped|
|1/3 cup Vera Jane's Extra-Virgin Olive Oil|
|1 Tbsp Aunt Mary's Italian White Wine Vinegar|
|1 Tbsp lemon juice|
|Pinch of sugar|
|1 lb fancy mixed greens or mesculin|
|2 Tbsp pine nuts, toasted|
|1/4 cup Gorgonzola cheese, crumbled|
|Salt and pepper to taste|
In a small sauté pan, sauté the pancetta till crisp. Add the olive oil, vinegar, lemon juice, and the pinch of sugar. Simmer for 1 minute. Season with salt and pepper.
Place the greens in a large bowl and toss with the warm dressing, pine nuts, and Gorgonzola. Serve.
