Caramel-Glazed Apples and Pears with Mascarpone
| 2 Tbsp slivered almonds |
| 2 apples – Fuji, Gala, or Golden Delicious |
| 2 pears – Anjou, Bartlett, or Comice |
| 1/2 lemon |
| 3 Tbsp unsalted butter |
| 3 Tbsp sugar |
| 1/2 tsp almond extract |
| 1/2 cup mascarpone cheese |
Toast slivered almonds in a dry pan over medium-low heat until just brown and fragrant. Peel and core apples and pears. Cut each into 1-inch pieces. Squeeze half of the lemon juice over the fruit and combine well.
Melt butter in skillet. Add sugar and continue to cook over medium-high heat, stirring until sugar begins to caramelize. Add fruit and contine to cook (caramel may harden), stirring until caramel melts and fruit softens(about 7 to 10 minutes).
Turn off heat and combine almond extract with fruit. Divide fruit into four dishes. Top each dish with about 2 Tbsp mascarpone and 1/4 of the toasted almonds.
