Pork Chops with Strawberry Balsamic Sauce

Recipe adapted from

1/3 cup Kitchen Basics Chicken Broth
1/4 cup DLM Strawberry Balsamic Vinegar
3/4 tsp DLM Italian Seasoning
1 tsp fresh garlic, minced
1/2 tsp sea salt
1/4 tsp pepper
4 duBreton Pork Loin Chops, 1 inch thick
1 Tbsp Vera Jane's Extra-Virgin Olive Oil
1½ cups strawberries, trimmed and quartered
4 cups baby spinach

In a bowl, whisk together broth and vinegar. Reserve.

In a small bowl, combine DLM Italian Seasoning, garlic, salt, and pepper. Rub over chops. In a large skillet, heat oil over medium-high heat. Add chops, cook, turning once, until no longer pink, about 7 minutes per side. Transfer chops to plate.

Cover with foil to keep warm. To same skillet over medium-high heat, add reserved broth mix. Bring to boil, cook, stirring occasionally until thickened, 4 to 5 minutes. Remove from heat, stir in strawberries.

Arrange spinach over serving platter, top with pork chops. Pour strawberry mix over chops. Serve.
