Farm Fresh Salad

5 ears of fresh corn, roasted or boiled
1 large tomato, diced small
1 lb green beans, blanched and chilled
1/2 small white onion, diced small
1 yellow squash, diced small
1 green bell pepper, diced small
1 zucchini, diced small
4 Tbsp fresh parsley, chopped
1 Tbsp fresh oregano, chopped
6 oz Garlic Expressions Dressing
Salt and pepper to taste (optional)

Remove kernels from cooled corn and place in a large bowl with diced tomato and green beans, cut into

1/4-inch pieces. Add onion, yellow squash, green bell pepper, zucchini, parsley, and oregano to bowl. Add

dressing and combine well. Season with salt and pepper to taste.

Makes 8–10 servings
