Grilled Halloumi Salad Gluten Free

Adapted from

3 cups spring mix
1 fresh mango, sliced
1 avocado, sliced
3 Tbsp fresh mint, chopped
1/4 cup Vera Jane's Extra-Virgin Olive Oil
2 Tbsp white balsamic vinegar
2 tsp fresh shallots, finely chopped
1/2 tsp DLM Sea Salt
1/2 tsp DLM Tellicherry Pepper
8 oz Mt. Vikos Halloumi Cheese
1 Tbsp Vera Jane's Extra-Virgin Olive Oil

Combine spring mix, mango, avocado, and mint; dress with vinaigrette of oil, vinegar, shallots, sea salt, and pepper. Place a heavy skillet over medium high heat; add the olive oil. Cut Mt. Vikos Halloumi cheese into 1/4-inch slices; fry until golden on both sides. Portion salad onto four plates; top with grilled Halloumi cheese. Serve immediately.
