Berry Fool

16 oz strawberries, washed, dried, and sliced
6 oz raspberries, washed and dried
6 oz blackberries, washed and dried
1 pt blueberries, washed and dried
2 Tbsp confectioners’ sugar
1½ Tbsp fresh lemon juice
1 tsp fresh lemon zest
1 cup whipping cream, chilled
4 Tbsp confectioners’ sugar
1 Tbsp fresh mint, chopped (optional)

Purée about 4 oz of strawberries, 2 oz of raspberries, 2 oz of blackberries, and 2 oz of blueberries with 2

Tbsp confectioners’ sugar, lemon juice, and lemon zest in a food processor. Chill until ready to use. Place remaining berries in a large bowl. Whip chilled cream into soft peaks. Add 4 Tbsp confectioners’ sugar,

and whip until stiff. Gently fold together whipped cream mixture, berries, and purée. Chill until ready to

serve and top with mint.
