Crispy Sweet Potato Chips
Recipe adapted from Sara Foster’s Casual Cooking
|2 sweet potatoes, peeled and thinly sliced|
|2 Tbsp Vera Jane's Extra-Virgin Olive Oil|
|Sea salt and freshly ground black pepper|
Arrange the sweet potatoes in a single layer on 2 to 3 rimmed baking sheets. Brush both sides with the olive oil and sprinkle generously with salt and pepper. Bake for 10 to 15 minutes at 350°F, turning the sheets halfway through, until the potatoes are golden brown around the edges and crisp (They will get crisper as they cool). Season with additional salt and pepper. Serve warm or at room temperature.
