Onion-Sauerkraut Relish for Beeler's Bratwurst

|1/4 cup canola oil|
|1/2 cup sugar|
|2 cups sweet onion, chopped|
|16-oz bag sauerkraut, well drained|
|1/4 tsp salt|
|1/2 cup cider vinegar|
|1/2 tsp DLM Caraway Seeds|
Heat oil in a large skillet over medium heat. Add sugar, stirring constantly until mixture turns light caramel colored, about 10 minutes (some sugar may harden but it will be okay). Add onions, sauerkraut, and salt. Cook over medium heat for 15 minutes, stirring frequently. Add vinegar and caraway seed. Simmer for 30 minutes, stirring occasionally. Use immediately or cover and refrigerate. Reheat to serve.
