C.A.'s Cornbread Gluten Free
|1 cup Bob's Red Mill All Purpose GF Baking Flour|
|1/2 cup Bob's Red Mill Yellow Corn Flour|
|1/2 cup Quaker Masa* Harina (white corn flour)|
|5 Tbsp Sugar in the Raw|
|2 tsp baking powder|
|1/2 tsp salt|
|1 cup milk|
|1/3 cup oil|
|2 jumbo eggs|
Preheat oven to 400°F. Lightly grease an 8x8 pan. Sift or whisk dry ingredients together. Lightly whisk together the remaining ingredients. Combine wet and dry ingredients until just mixed. Pour batter into the pan and bake 25 to 30 minutes or until an inserted toothpick comes out clean.
*If the package is not labeled gluten free, sensitive individuals should use all yellow corn flour.
