Mango and Grapefruit Salad

Adapted from Cooking Light

4 cups peeled mangoes, cut into chunks
2 cups ruby grapefruit sections, peeled and cut in half
2 Tbsp fresh lime juice
2 Tbsp Vera Jane’s Extra-Virgin Olive Oil
½ tsp salt
1/8 tsp pepper
2 Tbsp fresh mint, chopped

Combine mangoes and grapefruit in a large bowl. Whisk together lime juice, olive oil, salt, and pepper. Drizzle dressing over fruit and sprinkle with mint. Combine gently.

Makes 4 servings
