Greek-Style Chicken Burgers

1 egg white
1/3 cup fine dry wheat bread crumbs
1 Tbsp milk
1 Tbsp Italian salad dressing mix
1 lb DLM Chicken ground, or ground turkey, uncooked
4 pita bread rounds, toasted or 4 whole wheat hamburger buns, split and toasted
1/4 cup feta cheese, crumbled
Olive-Tomato Relish
2 Tbsp Aunt Mary's Italian White Wine Vinegar
2 tsp Vera Jane's Extra-Virgin Olive Oil
1 Tbsp Italian salad dressing mix
1 cup tomato, finely chopped
1/4 cup cucumber, finely chopped
1/4 cup Kalamata olives, finely chopped and pitted, or ripe olives

In a medium bowl, beat egg white with a whisk; stir in bread crumbs, milk, and the Italian salad dressing mix. Reserve remaining half of dry salad mix for Olive-Tomato Relish. Add chicken; mix well. Shape chicken mixture into four 3/4-inch thick patties. Grill patties for 14 to 18 minutes or until no longer pink (165ºF), turning once halfway through grilling. Serve the burgers on pita bread rounds with feta cheese and Olive-Tomato Relish.



To Make Olive-Tomato Relish:

In a small bowl, stir together white wine vinegar, olive oil, and the Italian salad dressing mix. Stir in tomato, cucumber, and olives. Stir to mix. Makes about 1 1/3 cups.
