|5 strips DLM Uncured Bacon|
|2 medium onions, chopped|
|2 lbs DLM Natural Beef Ground Chuck|
|(3) 14-oz cans diced tomatoes|
|(3) 15-oz can kidney beans|
|3 Tbsp chili powder|
|1 Tbsp ground cumin|
|4 tsp salt|
|Chopped onion, grated cheddar cheese, and sour cream for garnish|
In a Dutch oven, fry bacon until crisp. Remove bacon and sauté onion in bacon fat. Add ground chuck, break up with a fork, and cook until meat is browned. Stir in tomatoes, beans, chili powder, cumin, and salt. Crumble fried bacon, and stir in. Bring to a boil, reduce heat, and simmer uncovered 3 to 4 hours.
Refrigerate overnight. Reheat and serve with bowls of chopped onion, cheddar cheese, and sour cream if desired.
