Smoked Turkey and Watercress Sandwiches With Curried Apricot Mayonnaise
|8 pita bread rounds|
|1½ lbs sliced DLM Uncured Smoked Turkey Breast|
|2 cups watercress, trimmed|
|8 plum tomatoes, sliced|
|Curried Apricot Mayonnaise:|
|1½ cups mayonnaise|
|1/4 cup DLM California Apricot Jam|
|1/2 Tbsp DLM Curry Powder|
Preheat oven to 350°F. Place pita bread on baking sheet and heat in oven until just warm, about 5 minutes. Cut rounds in half, form pockets. Place in napkin-lined basket and keep warm.
Arrange turkey, watercress, and tomatoes on platter. Place mayonnaise in a bowl. Allow diners to assemble their own sandwiches.
To prepare mayonnaise: Mix ingredients in medium bowl until well blended. (Can be prepared 2 days ahead. Cover and refrigerate.)
